F 0812 Level of Harm - Minimal harm or potential for actual harm Residents Affected - Some Procure food from sources approved or considered satisfactory and store, prepare, distribute and serve food in accordance with professional standards. Based on observation, interview, and record review, the facility failed to store food under sanitary conditions when multiple food items stored in the refrigerator were expired, did not have labels, or did not have use by dates. These failures had the potential to result in food borne illness. Findings: During an observation on 2/11/19, at 8:26 a.m., while in the presence of the Certified Dietary Manager (CDM), the following items were in the refrigerator: a. One expired 80-ounce (oz) bag of shredded carrots with manufacturer best used by date 2/8/19; b. Two open bags of celery that were mushy, yellow-brown in color colored, and did not have a delivery label or use by date; c. One large bag of green onion with no delivery label or use by date; d. Four tomatoes with black discoloration were in a box with other tomatoes and had no delivery label or use by date; e. One opened container Asian sesame dressing had no shipping label, no opened date, and the manufacturer use by date was 11/26/18, and; f. One opened container of coleslaw dressing shipping label dated 12/5/18, and there was no opened date or use by date. During an interview with the CDM on 2/11/19, at 8:26 a.m., CDM stated all food items should have a date of delivery or a use-by date. The CDM stated the last food delivery was on 2/9/19, and the refrigerated food items should have been checked at time of delivery for anything that was spoiled in refrigerator and thrown out.
